How do I sign out of gmail on the galaxy S III?
I can't find "sign out" or "log out" in the settings, if you tap on the email address at the top, or even if you clear data from the app. Is there no way to require the phone to prompt you for a password when you try to open gmail?

If it's the Gmail account attached to the S IIII, the only way to log out is to go to Settings > Accounts and Sync. Tap on your Gmail account and then select Remove Account.
If you're looking to password protect your information, you could set up a lock for the phone itself at Settings > Lock screen > Screen lock. Select the option you prefer (PIN, pattern, face unlock, etc.) and then enter and confirm your lock settings.

You can always try changing the account password on a computer... Then when your phone tries to sync to gmail it won't be able to access the e-mail account and it shouid prompt you to change the password on your phone. I haven't tried it on the Galaxy S-III but that's the way it works on my LG Vortex.
But yeah, if you're looking to make it prompt you every time you open the app, your best option is probably going to be just putting a lock on the phone itself.

A round about way of doing this would be to download a third party App Protector from the Play Store. Perfect App Protector is a popular example, but there are several:
This will allow you to choose specific apps on your phone and set up a passcode lock for them. That way, you (nor anyone else) can no longer enter the app without punching in a passcode that you set up.
